As the final course comes to an end, all 24 couples make their way back to the bar for final drinks and debriefs. We spy some phone numbers being exchanged. Others dash off into the night. Everyone leaves in good spirits. The drink is bold enough to stand up to the rich, fatty duck, and uses fortified red wine, chocolate bitters and an orange twist to complement the beetroot and fig components, while the infused brown sugar and angostura bitters accentuate the botanical flavours.
Add all ingredients to a mixing glass filled with ice. Strain into a chilled coupe cocktail glass and garnish with an orange twist. This inspired a creamy flip style cocktail featuring dried fruit notes with a touch of lemon juice to brighten and contrast with the final rich chocolate dessert. The drink is garnished with black pepper for a little grain of paradise spice.
